Corked wine? Screw that!

Wine faults can come from a number of sources: bacteria, poor storage, oxygen ... Dale Hollow was struggling with some of their wines being "corked." A phenolic compound that has chloride in it can remain on corks if they aren't cleaned thoroughly. When a winemaker uses those corks to seal their wines, they unknowingly introduce those compounds to the wine. the result? Corked wine, which has an unpleasant "bookish" aroma. So what's the solution? Screw caps! While screw caps don't have the ceremony and flourish tied to uncorking a bottle, they better protect wines. Most wine drinkers still associate screw caps with low quality wines, but in reality, those metal caps are beneficial on many levels.
