RECIPE: Sesame Soba Noodles with Kelp
Ginger and cilantro mingle with tahini and sesame oil in this quick-and-easy soba noodle dish enhanced with kelp.

| Ingredients |
8 to 10 ounces soba noodles
1/4 cup diced, peeled carrots
1/4 cup roughly chopped Atlantic Sea Farms Ready-Cut Kelp
2 Tbsp thinly sliced scallion
2 Tbsp chopped cilantro
1/4 cup reserved noodle water
3 1/2 Tbsp tahini
2 tablespoons soy sauce
1 tsp Sugar In the Raw
1 Tbsp rice vinegar
1 1/2 tsp hot sauce
1 tsp grated fresh ginger
1 tsp sesame oil
| Preparation | In a small pot, cook soba noodles according to package directions, drain, reserving 1/4 cup cooking water. Add noodles to a bowl with carrots, kelp, scallions and cilantro. In a small bowl, combine dressing ingredients, including reserved water, and mix well. Pour over noodles and toss until coated.
