Why White Oak?

At Foeder Crafters, they only use white oak harvested from Missouri to make their casks. Not only that, they also only work with one saw mill, Mueller Bros., where the team knows exactly what to look for when setting logs aside and saws each plank to exact specifications. But why white oak? As the tree grows, tyloses forms in between the rings, making the wood from this species perfect for barrel-making.
