Gin in a Tiki Cocktail?

Tiki cocktails aren't only about the rum. Gin adds an herbal note to bartender Meredith Barry's fresh juice-forward tiki cocktail that includes fun ingredients like Golden Falernum and a "dibble dabble" of coconut and some salt, which Barry says is critical to the cocktails she and her team create at Platypus, a bar in The Grove Neighborhood of St. Louis.
