Recipe: Grilled Marinated Quail

Be cautious not to overcook quail meat as it will become dry and tough. The quail is sufficiently cooked when the meat is slightly firm to the touch (similar to the feel of a cooked chicken breast) and juices run clear. You can order Broken Arrow Ranch products on their site.
| Ingredients |
2 cups white wine vinegar
1 cup vegetable oil
4 Tbsp freshly squeezed lemon juice
Rinds of 4 lemons
3 cloves garlic, crushed
2 bay leaves
1 Tbsp soy sauce
1 Tbsp A-1 sauce
1 Tbsp vermouth
Fresh ground pepper, to taste
12 Diamond H Ranch Quail: Semi-boneless, Whole, Boneless Breasts, or Breast Split
| Preparation | Mix all ingredients (other than the quail) in a large bowl, stirring to thoroughly combined. Add quail to the mixture and marinate, covered and refrigerated, for at least 8 hours.
Grill over a medium hot fire about 12 to 14 minutes (click here for Broken Arrow’s tips for grilling quail), basting often. Quail is done when plump and firm to the touch. Serve two quail per person.
