Strength in Diveristy
As agriculture became more industrialized, diversity gave way to monocultures that were more efficient and profitable. Today, however, there is a movement to reintroduce diversity into the food system, and flavor is just one consideration. As the climate changes, we will need to identify drought resistent corn varieties. Yoli is working with the Univeristy of Missouri in helping to identify types of drought-resistent corn that taste good and work well in culinary applications so those varieties can be introduced to farmers.
