Rainbow of Corn Varieties

At Yoli, they mainly use four types of corn: white, yellow, red and blue. The white corn has the mildest flavor and the yellow is a bit more "corny," but it's similar to the white variety. Blue and red corn are more earthy, with the red variety having a slight butterscotch sweetness.

In Mexico alone, there are 72 (yes, 72!) commercially available corn varieties. But not every type of corn is good for making tortillas, so at Yoli, they test and try different varieties to see what's best and are working with the University of Missouri on a corn diversity project to identify which varieties do well in the Midwest.
