Savory Steel Cut Oats with Aux Arcs

One of my favorite cold weather meals is savory steel cut oats. Like soup only heartier. And you can make it in a multicooker as a one pot meal. Great for using up leftover veggies or meat!

Ingredients

  • 1 cup steel cut oats

  • 2 cups chicken stock or water

  • 1 small chopped onion (best if sauteed before adding, but skip this step if you are in a hurry)

  • ½ cup diced carrots

  • 1 clove garlic chopped fine

  • 1 tablespoon butter

  • 1 bay leaf

  • 1 can of diced tomatoes (optional)

  • 3/4 cup of diced chicken breast or any leftover cooked meat (optional)

  • 1 cup shredded Green Dirt Farm Aux Arcs cheese

  • Salt and freshly ground black pepper to taste

| Preparation | Add all ingredients to a multicooker except the cheese and stir well. Cook on high pressure for 5 minutes and allow to cool for 10 minutes before releasing the pressure. Stir in the Aux Arcs cheese while the mixture is still hot. Serve immediately. Serves 2-4.
