Nixtamalization

Nixtamalization is the ancient process where maize kernels are soaked and cooked in an alkaline solution of lime (or wood ash) and water to soften the husks and draw out nutrients. The softened kernels are then ground and worked into masa and then pressed into tortillas. The standardization of the process is attributed to the Aztecs and has been done in the same exact way for thousands of years.
